Qtopia 1.5.x

You can use the File Browser to open files directly with the associated application (e.g. to invoke the application to edit the file).

You can also use the File Browser to find your file and then you can click-and-hold it to bring up a menu where you can then select Add to Documents, and the file will appear in the Documents tab so that it can be opened from there.

Qtopia 1.6.x and greater

To open documents select the Documents tab then select the document to open.

To aid finding documents a document may be assigned a set of categories; it is then possible to search for documents based on a category criterion.
